Recipe: Chili Bean and Quinoa Tacos

You know how some days you think that maybe feeding your family grilled cheese and cereal again probably isn’t a great idea. I get in a making dinner rut, too. I just don’t want to make it. But because I’m the only one that cooks I just have to do it- even if it is something simple.
I think every mother (or person in charge of cooking for their family) is always looking for simple and nutritious. Our schedules take us from school to homework to quick dinner to sports. I need something quick and filling for my kids. Quinoa and beans are a great source of protein so win-win mamas!

Bean and Quinoa Tacos

  1. 2 tbsp olive oil
  2. 2 tsp minced garlic
  3. 1 tsp achiote
  4. 1 tsp cumin
  5. salt and pepper to taste
  6. 1 cup of quinoa
  7. 2 cups vegetable stock
  8. 1 can of S&W Chili Beans
  9. 1 cup of salsa
  10. crumbled queso fresco
  11. tortillas
Optional toppings
  1. avocado
  2. sour cream
  3. tomatoes
  4. lettuce
  5. shredded cheese
While this is a vegetarian option (I just can’t stomach meat right now) you can add ground turkey or beef to this to make it heartier. Or to trick your kids into eating quinoa…haha! I also used S&W Chili Beans in this recipe because I like the flavor and spices used, but I’ve also used S&W Black Beans, Kidney Beans or you can use all three for a 3 Bean Quinoa Taco. The beans always look so tasty and not like the typical “canned” food item. Another thing you could do is make a quesadilla with this filling or a taco salad.
